Rena's Steak Fajitas! Bueno!

It's been awhile since I've posted a recipe, but tonight I was making Fajitas, and I decided you might enjoy them just as much as we do! Cubed Steak fried to a crispy brown, Onions and Bell Peppers sauteed till all soft and smelling so good, Refried Beans, Shredded Cheddar, Sour Cream and Salsa Verde all wrapped in a Warm Tortilla! Can it get any better?? Absolutely Not!
1 family pack of Cubed Steaks (containing at least 4 steaks)
2 Bell Peppers
2 Large Onions
1 Can Refried Beans
Shredded Cheddar Cheese
Sour Cream
Salsa Verde
Tortilla's (Burrito Size)
Olive Oil and Canola Oil
Slice the Onions into 1/2 inch rings,  and Bell Peppers into 1/2 inch slices, and saute in about 3 tbls Olive Oil, untill wilted.

I buy the family pack of Cubed Steaks, containing at least 4 good sized ones, I use one steak on each Fajita.
This gives us enough for two for dinner and two for another meal.
Salt your steaks and dredge in flour, fry in canola oil, on high untill a good brown has formed, turn down to medium and fry till juices run clear.

Heat your Refried Beans anyway you like (stove or microwave)

In small bowls put your Sour Cream, Shredded Cheddar Cheese and your Salsa Verde

Place your fried steaks on a plate and while they are resting, put the Bell Peppers and Onions in a bowl.
Slice your steaks in to 1/2 inch slices and heat your tortilla's in the microwave for about 10 seconds, just till warm. Do not overheat.
Place heated tortilla on your plate an put a generous spoon of Refried Beans and smooth the length of the tortilla, this will be the anchor you place slices of Steak in. I put at least one steak sliced on each tortilla.

Place your sauteed Bell Pepper and Onions on your steak slices.
Sprinkle with Cheddar Cheese and Dollop on Sour Cream. Finish with Salsa Verde.


 Bring up the two sides, Lift carefully and take a Big Ol Bite out of one end. You will absolutely want to do a Hat Dance! I hope you will try this very economical meal for your Family, it's so good, it's like having a Fiesta!! Ole!
